
OUR PROCESS

We create liquids the same way, regardless of our scale - pushing the boundaries of what sustainability measures can be achieved in Mexico as our products and categories are enjoyed by more around the world.
We have designed machinery to balance the commitment to community employment without unnecessary hardship such as machinery to grind and mix the agave for fermentation with much less physical effort.


We have designed spaces that maintain the tradition of palenques without the antiquated safety issues such as smoke and ventilation.

We reuse all the water used for cooling through recirculation with unique and industry leading technology that avoids large amounts of water pollution.
We design equipment to use less water and firewood for distillation than seen in traditional palenques. We are exploring alternative ways to reduce that even more for example in our newest facilities we are one of the first to have begun to use gas instead of wood to heat our pot stills.

All natural resources used in the process are regulated and properly controlled to ensure that the impact is minimal, such as buying certified firewood to minimize as this source is derived from controlled tree removement that allows forests to regenerate and avoid bushfires. All the wood used for our ovens comes from sustainable and certified sources such as the environment ministry in Mexico SEMARNAT, indicating that the sawmills and forests that supply us are also accountable to these important environmental practices.


We have led the industry by eliminating the use of wood for distillation and are exploring alternatives with renewable heat sources.
We believe our land and rivers should not be adversely affected by our industry’s disposal. Our distilleries are committed to industry leading waste management.


We make compost out of our waste that can later be reincorporated as a nutrient for soil. In our newest facilities we have already begun to implement a 100% onsite composting practices. We intend extend this practice to all facilities by 2023.
